A military boarding school grad from a family of gemologists in Montreal, Q4 al Centro Executive Chef Bradford Ellis has an inherent appreciation for quality and discipline. Military college developed the leadership skills Brad would later use to lead the brigade at Q4. |

But after graduation he was hungry for a creative outlet. He found that the camaraderie and (sometimes) chaos of working the line in kitchens throughout Toronto and Montreal more than scratched his creative itch; it set him along an unexpected career path.
In 1994, Brad moved to Vancouver and enrolled in Vancouver Community College’s Culinary Arts program. After graduation he became the Sous Chef at L’Arena restaurant, and in February 2001, Brad joined Q4 Ristorante, then Quattro on Fourth, also as Sous Chef. In 2002 he was promoted to Executive Chef at Q4, and in December 2010 he made the move to downtown to Q4 al Centro.
Today Brad enjoys creating Q4’s signature dishes such as Cornish game hen with Rivera herbs, pistachio crusted sablefish and the legendary Spaghetti Quattro, while putting his own stamp on grilled calamari steak with braised garlic, ground cerignola olives in a spicy tomato caper ragout, and roasted rack of lamb in a fig and dijon mustard demi-glaze.
About Q4
Q4 al Centro, the sister restaurant to the ever-popular Q4 Ristorante in Kitsilano, opened in December 2010. Downtown’s newest neighbourhood hotspot, Q4 al Centro, is the freshest choice for lunch (M-F), dinner nightly, pizza, cocktails or anything in between.
